When the plumber arrives if you are unsure it is the plumber and you are unsure about opening the door ask for identification. The plumber should be able to provide a badge, business card, or some type of identification. In our modern world you can never be too sure.

If you are given a written estimate for the work you need done you should expect that this would be honored for a specific length of time. 30 days is common. A plumber should be able to easily tell you what parts you'll need and make recommendations too.

In theory if the plumber has come out to do the quote when he arrives to do the job he should have all the parts that will be needed for the job. However occasionally it won't go that way and a part will need to be ordered. Unless there are extenuating circumstances such as something broke during the repair, this really isn't acceptable.

Never pay in advance. If it is a really large job you may have to pay a percentage of the bill but always hold back at least 50% until the job is complete. When you receive the invoice you should be walked through everything on that invoice and it should meet your satisfaction.

Plumbing you can trust doesn't have to be at all complicated. It's all in the plumber you choose.
